I thought that her house was affected by hurricane Katrina, and that she was displaced, so was wondering if she made it back. I used to get some very good cooking advice from her when I was here before! I remember she was going to write a cookbook, and was looking forward to it. She contributed a lot when I was here a couple years ago, and I just hope she's ok! " Shonda, yes, I'm still around, but haven't had much time to participate on the lists much. Our house had roof damage from Hurricane Katrina, and our detached garage is a rotting pile of brick and lumber where the tree smashed it flat. Insurance won't pay for its replacement because they claim there was pre-existing damage. (It needed new doors.) At that, we're lucky. Friends of ours, whose home was in Lakeview (see also, 8-10 feet of water) have only just, almost two years later, beaten their way through the governmental regs and paperwork to BEGIN tearing down their old house. In the meantime, they're in a good ole FEMA trailer on the front lawn. I lost a huge refrigerator full of SCD foods -- all my meat, fish, tomato sauces, organic vegetables, and it's been very hard to get in the mood to do lots of cooking and fixing. I'm still SCD though! I became amazingly inventive about fast meals because the electricity was so flaky for so long after we returned that I couldn't count on ovens or anything that took time. Although a crock pot became my best friend because I could get things up and simmering and they'd KEEP simmering, even if the power went out for an hour or so. My 85 year old mom and my 83 year old dad have had some health issues, so I've been busy there. However, Mom and Dad LOVE hearing about the progress so many people make on SCD. They were sceptical for a very, very long time. I am just back from a long vacation which took me to Dayton Ohio, Albany New York, Rochester New York, and Toronto Ontario. Traveling ala SCD -- great fun! I attended the Historical Novelists Society Conference in Albany, a conference which includes the meals as part of the conference fee. I looked at what they offered for two breakfasts, two lunches, and two dinners, and said, " Nope! " They were sure the Desmond could provide SOMETHING for me -- I didn't want to risk some under-cook in the flurry of 500 meals to be gotten on the table in a short period of time putting ghod-knows-what on my food, and me ending up too sick to enjoy the conference I traveled so far, and paid so much to attend. So, I arranged with the conference to admit Harry (my husband) to the meals. He ate the food I'd paid for as part of the membership, and brought me a case with my SCD food in it. For breakfasts, I had either cinnamon-pecan pancakes and crisp bacon, or cheddar-bacon quiches, with Tropicana Orange Juice. For lunches, I had avocado-chicken salad, cheese biscotti bread sticks, and iced tea or water. For dinners. I had baked chicken or tender-roasted beef, brie spinach, lentil mock-potatoes, or green beans, cheese biscuits, and either cinnamon cake or butter pecan satin for desert. My sister in Dayton is SCD, and a friend I visited in Toronto was also SCD, so I could restock on yogurt. I was really inventive about other meals while traveling. One evening, we stopped at a place in western New York. I looked at the menu. Nothing, nada, zip, zilch, was even remotely legal. Then I had a thought. I always travel with bags of shredded cheddar and my own salad dressings, and muffins. (We have a plug-in fridge to keep things cold.) I asked if they had real bacon. They did. I ordered a plain salad, specifying no croutons, no bacon bits, no this, that, etc. AND I ordered three strips of bacon, done extra crisp. Put the bacon and two bags of cheese on the salad, along with Hurricane Dressing, and ate it, along with a muffin or two. I also almost had a problem when a friend in Rochester took us out to eat, and somehow, in the confusion, my food bag got left at our motel! It was an excellent restaurant, however. I explained my dilemma to the staff, and I had a wonderful meal of beginning with a baked brie cheese appetizer, lamb chops, steamed asparagus, and finishing off with fresh seasonal fruit. We are back in New Orleans, an unfortunately, I spent today, 2 July, my 31st anniversary, at the vet's with my Sunny-Girl (standard longhair dachshund) who has a massive UTI. She's still doing poorly, although better, I think, than she was, but I admit to a bit of paranoia, for her niece, Shadowdachs Pollyanna, died of one of these just a few weeks ago. Hurricane Katrina has put my cookbook on hold for a bit longer, unfortunately, but I continue to do recipes. I'm planning to rearrange my email presently to make it easier to read and respond. This address gets so much spam these days that I'm looking at going to a GMail account for SCD.
