Cooked Cheese More Digestible?

Mimi, Sheila,

I notice I get less bloat when I cook cheese into cheese " crackers " by putting

it into a 350

oven on a cookie sheet lined with dampened cooking parchment.

Does cooking denature lactose or casein further?

That sounds really tasty, my little food striker might like that.

How long do you bake them? and do you let them cool or harden

completely before eating?? Any specific cheese that does best? I'd

love more details!

My son loves cheese chips. The way I do it is I grate mild cheddar cheese on a

cookie sheet. Put it in the oven @350 for 8-10 minutes. Let them sit for a few

minutes and peel them off the cookie sheet and put them on a paper towel to get

the extra grease. My son would not touch cheddar cheese (he was an American

cheese guy) and I heard about the cheese chips and so I tried it and he eats

them all the time.

No cooking won't ferment lactose or denature casein.

If there are live cultures in your cheese the heat will kill them.

Also any enzymes will be destroyed at that temperature.

I like the Tine Norwegian sliced Jarslberg which is half the retail price at

Costco.

I sometimes sprinkle herbs on it and bake until it bubbles and the edges just

begin to

brown. Then cool it well so it is crunchy.

I saw a similar idea recently -- a recipe for crackers made out of crispy salami

slices. There is probably not a legal salami (that is also nitrate free) is

there?
