Guest guest Posted July 5, 2007 Report Share Posted July 5, 2007 Yes, I've had that happen to me before too. :-) Coconut oil will become a solid at temperatures below 76 F, so when cold stuff mixes with it, voila, hard waxy stuff. What I do is make sure what I am adding it to has come up to room temperature first. For example, when I'm making pumpkin pie filling, I start with putting the squash in the bowl. Then I add the egg yolks, then I add all the spices, vanilla etc, (this gives the eggs yolks time to warm up a bit), then I mix that up a bit with the mixer, which tends to warm the eggs up some more, then I add the coconut oil and complete the mixing. When I am making smoothies, I separate the egg yolks from the whites by hand, which warms the eggs up enough that by the time I add the coconut oil, it is warm enough to mix well. I also don't ever let the coconut oil sit with something cold next to it, the second it gets added to the recipe, that is the time I start the mixing. If it is wintertime and my coconut oil is hard due to the temp of my kitchen, I'll melt some in a pan first before adding it to recipes. I use organic extra virgin coconut oil too. HTH!
