When they came out of the oven they were a bit " crunchy " like a wheat flour cookie but when I put them in a container - after they had cooled completely - they became very moist and gooey within an hour. I ended up leaving the lid sitting on the container but not sealed. I used the cookie recipe on page 19 of SCD With Taste and Tradition: almond flour, eggs, honey, oil, baking soda.
