Guest guest
I have a question about adding gelatine to the yoghurt while making it in the yogourmet to make goat yoghurt. I know gelatine is legal but does adding gelatine to the yoghurt while making it have an influence on the good bacteria?

Guest guest
No, it will not affect the good gut bugs in the yogurt. Make sure that you use a reliable starter though, because the gelatin will set it up, even if it is not fermented right. I put in two 1/4 oz packets of Gelatin to 2 quarts of Cold Goat Milk, then heat up stirring often...make the yogurt as usual. Set up as usual in the refrigerator after 24 hours of fermenting. Guest guest
Hi Antoinette, Elaine did not want us to add gelatin before fermenting for 24 hours. After the 24 hours of fermentation it is okay to add gelatin to the yogurt. From http://lyris.dundee.net/read/messages?id=262772#262772 " Re: how about firming yogurt w/gelatin? 2003-11-14 20:52:00 <Elaine Gottschall> Marie I would think that letting the yogurt go through fermentation first and then adding the dissolved and slightly heated gelatin mixture (in about 1/2 cup water) might be better. I am trying to visualize the chemistry of what is happening when it is done your way and I'm not smart enough to figure it out.
