For Gelatin to dissolve it has to be hot. Doesn't it...or am I missing something? I would hate to be doing something that is not right. I personally asked Lucy R (from Lucy's Kitchen) if I could put in Gelatin into the cold milk, before heating it for making yogurt, and she said that it should not hurt anything. Just to make sure that I have a reliable starter so that I know that it has fermented and the gelatin has not created a " false set up " . I would hate to be doing something that is not right.>> Elaine did write that we *should not* add the gelatin before fermenting. She was concerned about the chemical interactions that could occur. If you did not see the link I can resend it. Others add the gelatin after fermenting and it thickens up the yogurt. If you like you can add the gelatin to a small amount of liquid (water, juice etc.) and heat to dissolve cool the liquid. Here is a SCD recipe that uses yogurt and gelatin. This recipe does not call for dissolving the gelatin beforehand: http://www.scdrecipe.com/recipes/r_007_00291.php BTW, while looking up gelatin on the web I came across this great recipe, that would be great to try, just use a legal orange juice/homemade OJ. I've seen lots of recipes sweetened by some form of date/date sugar in lieu of regular sugar. Is that something you could buy or do we have to make that also?
