I am trying to recall the status of butter beans and lima beans. Are both legal? Is there any special preparation method? I have lent my book out. Thanks! Thanks! > Suzanne > Suzanne, Dried beans lke white or navy beans or lentils must be soaked about 8-12 hoiurs, rinsed twice, simmered up to two hours until tenderin UNSALTED water before being added to a recioe even if that recipe will be cooked addtionally. I have 1 lb of fresh summer butter beans in the fridge that are waiting on the answer ...! For butter beans it depends on what you are referring to, since more than one bean is called a butter bean. Thanks!>> Limas should be prepared as lentils or white pea beans/navy beans are prepared in BTVC. Namely: Rinse beans, Cover with fresh water, soak overnight (8-12 hours) drain water, rinse. Add fresh water, bring beans to a boil then turn heat down to simmer. Simmer beans until tender. Try soaking just a few overnight and see if you get the same slimy/foggy water that you get with dried beans. If anyone knows different please let me know. If not then bring beans to a boil then turn heat down to simmer. Simmer beans until tender. Elaine advised not adding salt until after they are cooked to the tender stage. They don't seem starchy at all - when I bite into them they are crisp & green but raw-tasting. I seem to recall Jody saying that fresh or frozen limas can just be boiled not soaked, but I don't trust my recall, it's been awhile.
