Years ago I tasted baked Biscotti made with artichoke flour but it must have been from the illegal type of Jerusalem artichoke that is starchy. I mashed it until smooth and spread it thinly in my dehydrator. I used it to coat SCD marshmallows so that my kids could take it to Halloween parties at their nut free school. If you are still seeing major bowel symptoms I would wait to use it. When you dehyrdate vegetables you make them harder to digest.
