Hi everyone, is it ok to dehydrate squash and make flour out of it?

My son is 4 and has Asperger Syndrome. He's been on the diet sinch

March 28, 2007.

Great question, and an interesting idea. I also look forward to the

answer as I

never thought of doing this. Years ago I tasted baked Biscotti made with

artichoke flour

but it must have been from the illegal type of Jerusalem artichoke that is

starchy.

I asked Elaine about this and she said it was okay since my kids were

doing well.

You should cook it first. I mashed it until smooth and spread it

thinly in my dehydrator. I used it to coat SCD marshmallows so that

my kids could take it to Halloween parties at their nut free school.

If you are still seeing major bowel symptoms I would wait to use it.

When you dehyrdate vegetables you make them harder to digest. If

doing pretty well start with a small amount and see how it is

tolerated.
