I dehydrate strawberries and grind it to flour for my husband's yogurt (he doesn't like the chunky texture). I want to store some of it for the cold months. It has natural sugar in it and the flour can stick together just ever so slightly, but separates when shaken. How could I store it? Do I need to dip it in something before dehydrating it? Would it freeze (seems it would get tacky if I did)? Or how long will it last just powdered and in a mason jar? Anyone have any ideas? Dehydrating the strawberries and putting them in yogurt was a sure winner with my husband. He's not SCD yet (he's holding out), but I've gotten him hooked on goat yogurt. Thanks Marilyn for the idea. I don't bother to dip my fruit in anything because after all, it's those dips and washes and ghod-knows-what that can be an issue. My thought would be to dry the strawberries, freeze them in zip-lock, then defrost -- if they aren't quite dry enough, you can give them a few more minutes in the dehydrator to get rid of freezer moisture -- and THEN grind them. In Other Words, only powder as much as you're going to use in, say, a month. Dried fruit actually has quite a long shelf life, even without preservatives -- it's why drying is one of the oldest food preservation methods. But the shelf-life will depend, in part, on your local climate. I'm in humid N'Awlins, so I tend to shove everything in the freezer to help prevent moisture encroachment. It's so nice to just put yogurt in the dehydrator and just let it do its thing and not worry about temperature. Wonderful investment!
