Need good cake recipe with no/low honey & nut flour

Hi,

I'm needing a good recipe for a SCD cake for my son's 9th birthday next

week. He is on stage 3 but still very sensitive to honey (although I'd

be willing to try a small amount) and nut flour. He really loves

carrot cake. He's eating eggs, goat yogurt & some cheeses with no ill

effects. Any ideas?

My son can't do nut flour, nut butters, or too much honey. I'm using

the pumpkin pie filling recipe (uses winter squash) from

pecanbread.com made without honey for my son's 5th birthday party this

weekend. Instead of honey we use 2 tsp of vanilla. I'm going to " ice "

it with cream cheese icing (dripped yogurt, butter, a little honey,

and vanilla). Recipe for the icing is from Lucy's cookbook although it

calls for a decent amount of honey, we just use a little.

Good luck! I'll be interested to see other replies to this question.

Maybe I'll change what I'm making for the party then, LOL!

Hashimoto's Thyroiditis, Fibro, CFS, yeast/candida, copper overload,

adrenal fatigue(mostly healed!!!)

Kids: son Rhowan 5 yrs old, chronic diarrhea/loose stools,

yeast/candida, ADHD, salicylate intolerance; daughter Willow 6.5 yrs

old, mild GI issues, salicylate intolerance

Started SCD June 2006, went slightly off for awhile in Nov 2006, back

on strict SCD starting May 2007. (Redid intro the last week of June

2007 and recently discovered that most carbs have to be thoroughly

pureed in order for my son to tolerate them)

Are you saying that he is sensitive to nut flour (only) and is ok

with nut butter? You can substitute an equal amount of nut butter

for the nut flour in a recipe. We love Cashew Butter Cake but make

it in the food processor instead of the method explained here:

Could you use 1 cup of nut flour in a large recipe? I see he likes

carrot cake. How about Carrot Squash Kugel?

It has carrot in it. On the other hand since it's not exactly like

carrot cake, it might be disappointlingly different.

How about making cheesecake from BTVC?

Before my son could have nuts, we did a birthday with a pyramid of

baked pear halves. Have you had baked pears? They are unimaginably

fabulous. All SCD and non-SCDers who tried them loved them. They

are, however, not cake.

I wonder if Sheila's Nut-Free, Dairy-Free bread could be sweetened

and used as cake?
