He is on stage 3 but still very sensitive to honey (although I'd be willing to try a small amount) and nut flour. He really loves carrot cake. He's eating eggs, goat yogurt & some cheeses with no ill effects. Any ideas? I'm using the pumpkin pie filling recipe (uses winter squash) from pecanbread.com made without honey for my son's 5th birthday party this weekend. Instead of honey we use 2 tsp of vanilla. I'm going to " ice " it with cream cheese icing (dripped yogurt, butter, a little honey, and vanilla). Recipe for the icing is from Lucy's cookbook although it calls for a decent amount of honey, we just use a little. Good luck! I'll be interested to see other replies to this question. You can substitute an equal amount of nut butter for the nut flour in a recipe. We love Cashew Butter Cake but make it in the food processor instead of the method explained here: http://health.groups.yahoo.com/group/pecanbread/message/30654 Could you use 1 cup of nut flour in a large recipe? I see he likes carrot cake. How about Carrot Squash Kugel? http://scdrecipe.com/recipes/r_056_00281.php It has carrot in it. On the other hand since it's not exactly like carrot cake, it might be disappointlingly different. How about making cheesecake from BTVC? Before my son could have nuts, we did a birthday with a pyramid of baked pear halves. Have you had baked pears? They are unimaginably fabulous. All SCD and non-SCDers who tried them loved them. They are, however, not cake.
