Hello,

I've made chicken liver pate as instructed in Breaking the Vicious Cycle. It's

been in the fridge since Sunday, three days ago, and I'm wondering: how long

does it stay good? It is a meat product after all. Should I keep it in the

fridge for another day, then freeze it, and thaw as needed? Some advice on this

issue would be great. Please reply.

Dan,

I'd freeze it now and defrost as needed. I

usually put things like this into ice cube trays,

freeze, pop the blocks, and put in a labelled zip

lock bag in the freezer. Then I can take out one

or or more blocks as needed, and not have to keep

defrosting and refreezing the stuff.
