Hello - Am about to make some ghee and wanted some advice. I have made ghee

before and

I was wondering how fastidious you have to be about removing the white bits

after melting it?

Do you have to strain it through muslin ?

OOPS!

the question was how do you know for sure by looking at it when

you've finished it when all if the casein is out and its just the

fat left?

I just spoon out as much of the top foam as I can, pour the ghee

through several layers of cheese cloth, and quit pouring before the

white residue at the bottom pours out. I use the bottom stuff for

cooking for non SCDers or throw it out. There is really little casein

in butter. If you don't get any of the white part into the ghee you

will be using, you are fine. It is definitely worth making because it

tastes so much better than the kind you buy; I have no idea why.
