I have made ghee before and I was wondering how fastidious you have to be about removing the white bits after melting it? Do you have to strain it through muslin ? Guest guest Posted August 20, 2007 Report Share Posted August 20, 2007 I just spoon out as much of the top foam as I can, pour the ghee through several layers of cheese cloth, and quit pouring before the white residue at the bottom pours out. I use the bottom stuff for cooking for non SCDers or throw it out. There is really little casein in butter. If you don't get any of the white part into the ghee you will be using, you are fine.
