I have gotten so many good food ideas off this site that I wanted to

share something really good. I have been going to the Farmers Market

this summer and buying fresh fruit. I did strawberries and am now

doing peaches and blueberries. I wash the fruit and put it in a pot

and cook it on low until it is soft. I let it cool off and then I eat a

bowl of it lukewarm with a dollop of yogurt. So good. I let the fruit

continue to cool off and then put it in baggies and freeze it. I then

can throw a baggie of it in the blender with some yogurt and a little

saccharin and have what I call my ice cream. I am on stage 3 so this

solves the problem of all the fruit needing to be cooked first.

Do any of you creative cooks have any good ideas for a cold salad made

with cooked veggies? I was thinking of cooked green beans or cooked

broccoli with some sort of dressing? Or maybe spaghetti squash or

zucchini or acorn?

Your fruit treat sounds delicious, !

For a cold cooked veg salad, I think the Honey-Dijon Vinaigrette recipe

in The Grain Free Gourment would be perfect. There is also a Basil-

Cider Viaigrette that sounds good in the same book.

Google some conventional recipes, leave out anything illegal and then

just sub one of these dressings.
