I do wish there was more evidence that the UHT milk is " so damaged " other than one post referencing a person who is no longer on the Long Island list. I will advise people not to use it, but I wish I knew why. It is heated 1-2 seconds at a very high heat for the purpose of reducing the spoiling of nutrients (according to Wikipedia). Would this keep our yogurt bacteria from multiplying and consuming the lactose? Does it put something bad into the milk that we can't digest?
