Guest guest Posted September 1, 2007 Report Share Posted September 1, 2007 Hi, Silly question or not here goes: First time with Goat Milk Yogurt and first with Food Dehydrator. To make the yogurt in the Food Dehydrator, my instruction booklet said to cover the yougurt while fermenting and NOT to open the door till it finished cooking. My old yogurt makers ( which always over heated all 3 different brands) were always uncovered weather the little jars or in the liter plastic containters. The yogurt maker itself had a cover of course, but the containers inside went uncovered during the fermentation time. My question is what to do in the case of the F. Dehydrator? Uncovered vs. covered. Also, what is best to use, glass or plastic to ferment the milk in. I imagine temp. influences depending on the container used...maybe I'm wrong. I have heat resistant containers (good for microwave use) as well as glass pans for baking. As for not opening hte door, I'll have to do so, because people said that even the though the dehydrator is the most reliable type of machine it still needs some watching and temp checking as well. One last thing. We all know 24hrs is the minimum fermentation time. Someone said something about not letting the Goat milk ferment longer than 25hrs. Question: Does the Dehydrator need preheating? If so, do I start the fermentation countdown from the time it reaches the optimum temp? This really has me thinking and wondering.. Thanks for answering questions. You can put the yogurt in a container with a lid or cover it if you want to be extra careful (to prevent contamination). <<Also, what is best to use, glass or plastic to ferment the milk in. This really has me thinking and wondering..>> I start my fermentaion time once the milk with starter reaches the correct temperature range. I then let it ferment for 24-29 hours.
