But I'm wondering if it's possible to can with honey instead of sugar by simply substituting the sugar with honey. Has anyone done this before? I have a peach tree in my front yard that decided to have quite a bountiful year of production and need to get them preserved somehow! Also, does anyone know if pectin is legal? Guest guest Posted September 6, 2007 Report Share Posted September 6, 2007 Pectin is not legal. My mom used to can fruits with no sweetener at all, so I would imagine that honey would be fine. (Neither is any recipe which calls for cooking apple peelings in with the fruit, as the peels have high levels of pectin, and you'll be concentrating it in the jam.) There are books on canning with honey -- and a friend of mine has made some really luscious stuff with it. The one thing you have to do is adjust your honey amounts to balance the sugar and water amounts called for. I haven't actually experimented with it.
