Guest guest
On the pecanbread web site under recipes, there is one for a flourless peanut butter cake. If you leave out the almond flavoring, I think you would be Feingold safe. It calls for one egg, but there are egg substitution suggestions under " egg replacers " (scroll down page). If you scroll down further, there is an eggless brownie recipe made with pecan flour (under egg-free baked goods) that looks Feingold safe as well. I know you were looking for a cake, but maybe it could pass for one if you didn't cut it into squares. I've never done the Feingold diet, but I have the book and just checked the food list. I might be missing something, but maybe one of these recipes could be adapted.
