It's as if I've been transported to the future where everyone around me has been sadly deceived by the food industry. Quite happily, they eat their little food wafers. I try to explain to them what real food tastes like, but no one seems interested. As I try to explain, they ask, 'Why would anyone want to go through all that work? " and " Who has the time? " They all seem quite happy eating their processed food wafers. With the wide variety of tastes and textures available, no one gets tired of them. One lady even commented, " Why go through all the work to eat a potato which will spoil, when you can just have an potato wafer, which doesn't? " They are so blind to the great food scam that has been so carefully constructed. Everyone I see has some sort of health problem. I try to convince them that maybe it's something lacking in their diet, but they assure me that the wafers have all the nutrients they need . Once in a blue moon, I find someone else who thinks as I do, but finding real food to eat is a challenge. Even at those specialty shops, a lot of the food is not as it seems. The produce and meat often have substances sprayed on them or injected into them to make them look better and last longer. The water they drink isn't just water anymore, either. It's improved (or so they claim). Tired of struggling so hard just to survive, I began wishing for home. But then I realize that I am home. Although we have more available than just wafers, I still see people buying potato chips, pizza flavored chips, Chik'n in a Biskit and the like. I still can't trust my water or my food. People still don't want to discuss their heath in relationship to food. I guess the future isn't too far off. (Redid intro the last week of June 2007 and recently discovered that most carbs have to be thoroughly pureed in order for my son to tolerate them). Sept 07 UPDATE: Seeing MAJOR improvement in behavior and salicylate tolerance, son has FINALLY potty-trained, and he is having frequent " trophies. I've stopped trying to convince people, even those whose children need it, because they just don't listen. I see kids being fed sugar cookies and lollipops on the playground and then the moms say their kids don't sleep well and don't eat their dinners. Duh. Even if I gently suggest cutting back on sugar, I'm met with " they don't eat much sugar " . Ok. I see the child's breakfast is bread, waffles, syrup and orange juice - nah, no sugar there. I'd love to help and whenever anyone asks me about the diet my son is on, I tell them. But I can see that they won't do it. All I know is, thank God someone told me about SCD so I could save my son. A big thank you to Ruth Callahan from the doula agency we used. When I first discovered I was gluten-intolerant I also went through what I call my " Evangelical stage " of talking about food additives, etc., etc. I think because once you start reading labels for wheat/gluten (I've always read labels, but not for those items) in the stores you are so SHOCKED at what all is in that canned soup you love to heat up when you're tired and in a hurry! It all becomes very limiting. And then you look around you at people and you are sure you can " spot " people who are probably suffering from gluten problems. I've now gotten to the point of not thinking about that ... mainly because I found my first couple-three weeks of GF eating to be such a free and ephoric experience. But now I've settled into problems that apparently tend to show up along the way, so I'm focused on myself again (although I'd rather not be!)
