I make my own almond milk as the store bought one have a lot of stuff added to them and I also use fruit juice concentrate instead of honey because I'm allergic to honey. ALMOND MILK 2 cups organic raw almonds 4 cups filtered water (X2) Soak the almonds in 4 c filtered water overnight. Strain them and rinse them in the morning then put them in a high speed blender with 4 more cups of filtered water. Blend on high several minutes. Strain all this through a cheese cloth lined strainer, let it rest a while in the fridge then squeeze the cheesecloth out to get a lot of the trapped milk. I just hold the tops of the cheese cloth together and twist it for a while not allowing the mashed nuts to come out of the top of the cheese cloth. I then bring the milk almost to a boil to kill any unwanted bugs that are in the milk. Then cool the milk to 110 degrees by putting the bowl with the milk in an ice bath or fridge. Now add you sweetener weather it is honey or the fruit juice and your Progurt, I used 1/4 tsp. I have a food dehydrator, so I just put the jars in it to incubate. I set the temp and close the door. When the 8-10 hours are over then you have to put the jars in the fridge over night and in the morning you need to strain the yogurt. You drip it through a cheese cloth lined strainer for about 1 hour. Any suggestion?>> Sorry, but commercial almond milk is not legal. This may be part of the problem. There are recipes for making your own nut milk at http://pecanbread.com/new/recipes/nutmilk.html Adding honey to the nutmilk will give the bacteria more to feed on and will give you a thicker yogurt and higher numbers of good bacteria. Are you cooling your nutmilk to lower than 75°F? It is important that it be cool especially if using GIproHealht's Progurt. On company letterhead is best. Elaine did not approve fruit juice concentrates for SCD. That it is made from pure organic fruit, that's all. Is this sufficient to believe them. I'm trying so hard to follow the diet and not being able to use honey, eggs and dairy products makes it quite difficult. My only answer is using the fruit juice conc. and the almond milk. I tried making my own but it took me basically all day to make just a little bit of it and I don't think it was near as concentrated or as good as the stuff I got from the company in question. Besides they say they use a cold method that preserves all the natural vitamins and enzymes.
