Do you know if it´s posible? Second, what happens with the casein in legal goat´s cheese? Is it the same as in homemade yogurt? Thanks for your help and excuse my english.... You can try and call them also they only have voice mail but at least you can leave them another message. Once you get to them they are very helpful. Are there certain brands? Is there some specific wording to look for on the package? If not, check with the company that makes it. << Are there certain brands?>> I use Black diamond cheddar, Kraft cheddar, armstrong cheddar etc.. but there are many different brands that are legal along with many different types of legal cheeses (listed in the Appendix of BTVC). <<Is there some specific wording to look for on the package?>> It should say bacterial culture or starter culture or cheese culture/ starter bacteria. If unsure on the wording ask on the list if okay. Also, it must be aged for at least 30 days.
