Elaine suggested that we do not give up on foods too soon, that we try them again in a few weeks...unless of course they caused anaphylaxis (or deadly reactions). Many of these intolerance vanish as the gut heals and the good gut flora is established by eating the yogurt and taking acidophilus. ONE of the biggest errors that too many make is not eating the yogurt. Once a person does this...this is when the healing starts. The yogurt is so powerful and wonderful. SCD Homemade yoghurt that is fermented for 24 hours will have an average concentration of 3 billion cfu/mL of yoghurt. For those who are used to using teaspoons not mL...There are 5mL per teaspoon. So, based on this information, 1 tsp of yogurt has 15 billion cfus!!!!!!! Now you can't beat that one! There is not one probiotic on the market that can match. Can you imagine how many good gut bugs are in a cup full? If I did the math right...this means that 549 billion cfus is in ONE CUP FULL. Elaine said that children can eat up to TWO cups a day. It was not until my daughter was eating large amounts of this yogurt that her intolerances where " healed out of " and her seizures and autism got under control. This yogurt is a MUST. In my opinion it is the " trade mark " of the diet! The SCD diet was created to starve out the bad gut bugs, without starving out the person. The entire diet is created by monosaccharide sugars. These are easy for the body to absorb and digest, leaving very little for the bad gut bugs to feed on. So the bad gut bugs that keep the vicious cycle going starve to death. When we eat the SCD yogurt and take the acidophilus that Elaine suggests...we put in good gut bugs. This allows the intestines to heal...and many " allergies " will be healed out of, when the intestinal wall is no longer allowing undigested particles through, that wreck havoc on the immune system. Certain foods that contain fructose are typically only a temporary concern that is healed OUT OF. Many of us arrive to SCD " carbohydrate intolerant " to many things. In the beginning of the diet, it is suggested that we peel and cook everything, to help in the digestion of foods that are hard to digest with a injured intestinal lining. Once the gut heals, the person can tolerate more and more SCD foods, if they came simply intolerant and where not having anaphylactic reactions (if it is deadly....never eat it again)........but to have this kind of success, it is imperative that they follow the guidelines in Chapter 9 and 10 to get these results. No short cuts...no cheating. Elaine suggested " fanatical adherence " ......we took her seriously...and it worked.
