Nut muffins

Can anyoone tell me how to make the nut muffins without eggs or honey?

I can't eat eggs or honey so I haven't made any of the muffins or

breads. I am getting relly constipated on this diet without my fiber.

I am eating lots of vegies and some fruits but it not helping. I also

am eating stewed prunes and beet juice. Any help on this would be

greatly appreciated. Also anyone know where to order nut flour that is

ORGANIC?

You can use pureed squash instead of the eggs. You can also look at

other egg substitutes at pecanbread.com. If you don't mind the muffins

not being sweet, you can leave out the honey. You can use saccharin or

no sweetener. Maybe you could put some homemade pear butter or pear

sauce cooked until very thick on your muffin to add sweetness. Pears

are helpful (for me at least) with constipation.

I agree with . I used squash and/or pears in

muffins for a very long time and had great success

with them.

I have never had good results with most egg replacers, but I do have a

good recipe that works without eggs and honey. I make a thin brownie

instead or muffins because it doesn't have to rise as much. They

tastes great!

1 cup almond butter

1 banana (Helps it hold together. You could use BN squash.)

1/4 cup pear sauce

1 tsp vanilla (optional.)

egg replacer: 1 1/2 T water, 1 12/ T oil (I use a little of the oil

from the top of the almond butter plus about 1/2 T from olive oil), 1

tsp BS, 1/2 tsp vinegar

Bake for 20-25 minutes. I use a glass dish that looks like it's about

12 " X 12 " the brownie rises to about 1/2-3/4 inch.
