No, all beans aren't legal.

BTVC p 53-54. Dried white navy pea beans (also

called haricot beans) are legal. Lentils are

legal. Dried split peas are legal. Dried and

fresh lima beans (babies recommended) are legal.

Kidney beans may be tried with caution after

healing is well under way, but not at the

beginning of the diet. Chickpeas, bean sprouts,

soybeans, mung beans, faba beans, and garbanzo

beans are illegal, as are black-eyed peas (beans)

and purple-hull pink-eye beans.

All legal beans must be prepared according

to the directions in the Gourmet Section

of BTVC,. P 83. In other words, beans must be

soaked over night in cold water. Drain beans and

throw away soak water. Rinse beans thoroughly

under running water. Cover with fresh water and

simmer at low heat until beans are tender. This

may take as much as two hours. Do not salt beans

before boiling, as they will not become tender.

Do not use flours made from beans or lentils as

they were almost certainly not soaked before

grinding. (BTVC, p58). If such bean flours are

marked “pre-soaked,” they may be used sparingly.

Soaked and cooked navy beans may be drained and

puréed and used as an extender in some of the

bread and cake recipes to cut back on the amount
