ADZUKI BEANS

Hello

Thank you to all who have replied to my question regarding adzuki beans. I still

do not understand, however, why adzuki beans are illegal. Please explain why:

such as, are they full of starch? I've researched the adzuki bean and from what

I've read I don't see how it is illegal. I am only asking because it is a high

source of iron and is used in many dishes of Japanese cuisine, foods which I

hope to make SCD legal.

If there is no option but to forget the adzuki beans, I suppose I'll have to use

red kidney beans. It won't give the same result but at least I can use some sort

of red bean.

So, if anyone can tell me why adzuki beans are illegal, please reply to this

email.

Thank you,

Dan

The legality of various plant material is based on a number of

factors: amounts of amylose, amylopectin, proteins etc. (see pages 28-

29 BTVC 10th edition.

In looking up info on Adzuki I saw that the seed coat can harden on

adzuk and prevent the release of some starch during soaking. This

may be one of the factors that caused Elaine to label it as illegal.

Depending how long you have been on the diet and what symptoms you

are having (or not having) -some properly prepared beans may be

okay. Elaine wrote that when you are symptom free you can try soaked

cooked kidney beans.
