I still do not understand, however, why adzuki beans are illegal. Please explain why: such as, are they full of starch? I've researched the adzuki bean and from what I've read I don't see how it is illegal. I am only asking because it is a high source of iron and is used in many dishes of Japanese cuisine, foods which I hope to make SCD legal. If there is no option but to forget the adzuki beans, I suppose I'll have to use red kidney beans. It won't give the same result but at least I can use some sort of red bean. In looking up info on Adzuki I saw that the seed coat can harden on adzuk and prevent the release of some starch during soaking. Elaine wrote that when you are symptom free you can try soaked cooked kidney beans.
