Hope you remember me. We spoke quite a while at the end of the Gothschall event

I am sorry to bother you, I know you must be so busy.

Could you email me the Squash Cookie recipe as I have alot of Organic winter

squash and I would lilke to make the cookies for my son

Hi Roseann,

It is great to hear from you. Here is a recipe from Teena:

" My son love bread and is in the early stage, too. I recently cooked half a

medium

butternut squash and puréed it with two eggs and two ripe bananas. I cooked

it at 325 for an hour in a bread pan, then sliced it into " muffin " shapes.

My son LOVED it. I put a little honey on it to serve. It's similar in taste

to banana bread. "

I will try to find more recipes to post soon with butternut squash.

Can you subsitute Pears for the eggs if you are egg free?

Hi Roseann,

I would use a mini muffin pan.

I never tried cooking without eggs but here is a comment by Dana:

" I have been able to make eggless muffin by peeling and cooking two apples

or pears and pureeing. I add them in place of eggs. The muffins don't hold

together as well as with eggs, but I found that if I refrigerate them after

baking, they do hold together just fine. "
