Hi Roseann,

I am copying a post by Dana about Debbie's recipe. I hope that you enjoy it!

" Did you get the recipe a couple of weeks back for squash buttons by

Debbie Kirkland ( I think that is her name). It does not use any nut

flours and my boys just love it.

One large acorn squash cooked

2 eggs

1 tbs honey

a little cinnamon

Blend in food processor and pour small amount 1-2 tsp in well greased

mini muffin pan and bake on 300 degrees for 40 minutes

Her explanation is better than mine, but that is the gist of it. I

use muffin liners and they work just fine. "

Mashed cauliflower is good instead of mashed potatoes...you have to

drain it really well after steaming it so it's not too watery, and

then puree it. Some SCD legal cheese is good in there.

Also, as my dd and I have been cooking various winter squashes this

fall, such as pumpkin and acorn squash, we agree that these taste

somewhat potato-ish, and would make a good substitute for mashed

potatoes.

Hope this helps,

Alana
