And made it for my husband after -- lost my culture courtesy of Hurricane Katrina. Because kombucha is a mix of bacteria and yeasts, I would view it as highly advanced, somewhat like kefir. Even pre-SCD, I used to ferment it around three weeks, or it still tasted sweet. I would not use it until you've seen quite a bit of healing, and then introduce it like any other very advanced food.
