" Once the pancreas is decreasing its ability to produce insulin, then it does not take much for any food to raise blood sugar. If it is a moderate to high glycemic index food like bread then it will take longer to be broken down. My CDE RD tells me to be careful and not put too much into the glycemic index factor since it is a very difficult thing to access. She means that determining the GI of a food has a lot of other considerations than the food itself. After a while you can make up your own list of foods that you tend to break down quicker than others. For example, I can eat a yogurt only for each meal and not take any insulin, but if I have a quarter cup of cereal or a couple of crackers then my blood sugar will go up and stay up for some time.
