legal binder for baking

My son is allergic to egg so I can't use eggs nor gums as binder (no

banana either). I want to make nut flour muffin but I want to use

something to bind the flour so it won't easily fall into pieces.

Anyone has any suggestion?

I used cooked pureed pear (about two of them for a muffin recipe).

Here is a basic egg-free bread recipe-you can do pretty much whatever to it

and make something new

2 c nut flour

3 Tbsp ghee, coconut oil, or legal shortening

2 c cooked, pureed squash, zucchini, or fruit

I use zucchini for muffins and add ½ c honey

I use butternut squash and add ½ c honey and make “pumpkin bread”

I use any squash, add garlic, salt, and spinach and bake it flat to make

pizza crusts

Bake at 350 for 20 minutes for muffins, 40 for bread, 10-15 for pizza

crusts.
