If you have any citations on this I'd be interested in them. Burnout, as you mention could of course also be a concern for me, if even small amounts of alcohol would cause that. Unlike Jim, what remains of my pancreas seems to be enough to function. I take enzymes - Lipram CR10- but according to my GI that's mainly so pancreas just doesn't have to work so hard.
