(I´ve read all of the soaking, rinsing, cooking, not salting, amounts of hours etc, instructions. Many thanks for the thought, though) It would be nice to get rid of the skins, but are the SKINS OF BEANS " LEGAL " ? How do most people do? I know lima and navy beans are legal, but are also RED (KIDNEY)BEANS AND BLACK BEANS? (Specially red would be nice. I saw it mentioned in the " Eat well, feel well " cookbook) Other knowledge of beans that cannot be found in the BTVC or Pecanbread site? There are only 3 dried beans you can use: navy, lima, and lentil. The black beans and red kidney beans may be tried after you have healed well. Navy beans/white pea beans are known by many names. These are dried navy beans = Yankee bean = white pea bean = pearl haricot = Boston bean = Boston navy bean = pea bean = haricot blanc bean = small white bean = haricot bean = fagioli. They are legal. What white pea beans are NOT, are great northern beans = cannellini bean = white kidney bean = fazolia bean... because then they would be illegal. If you are choosing limas, be sure that they *are* limas. How do most people do?>> The skins are legal on the beans. If you want a puree (to make recipes like fake mashed potatoes) you can put them through a food mill or seive.
