haven't started SCD yet...question about pumpkin

Hi there! I haven't started the diet yet. Just got my BTVC book this

week...I noticed a few recipes that use pumpkin and I was just

wondering if any of you have frozen cooked pumpkin. I figured now is

the time to get it even though it might be a while before we can use

it :) Thanks so much!

Welcome to the group, Kari.

Yes, you can freeze cooked pumpkin. It freezes very well. Also, any

of the pumpkin recipes work well with winter squash, too, so you don't

have to stock up, if you don't want to. Winter squash is available all

year round these days.

Hi Kari,

The idea I got from this group on freezing is to fill muffin tins with

squash or pumpkin that has been deseeded, cooked, peeled and mashed. Then

after its frozen they pop into freezer bags nicely. It’s a life saver for

sure!!
