We will most likely begin the intro diet after his birthday in early Nov. Right now I'm trying to figure out what in the world I will feed him as many of the things on the intro diet and first 2 stages are not preferred foods for him. He does love to eat pancakes, but mostly because of the thin layer of maple syrup I spread on them. I see from the pecanbread site that maple syrup is illegal. Guest guest Posted October 20, 2007 Report Share Posted October 20, 2007 I boil honey until it will form a solid when dripped into cold water (this is a test to make sure it has boiled enough) and then add pure vanilla flavoring into it. I haven't seen the answer to this yet in the SCD stuff I've read so far -- does it matter what kind of honey one uses? I buy raw honey from a local farmer. Also, I suppose it would be wise to try replacing the syrup now, while he is still eating " regular " pancakes, so that when we move to SCD in Nov., my son will not associate the loss of maple syrup with the intro of a new style of pancakes? Guest guest Posted October 21, 2007 Report Share Posted October 21, 2007 We were worried about maple syrup replacements too, but have joyfully found numerous ways to " indulge " while staying SCD legal. Try mixing cinnamon with honey, and drizzle it on the pancakes. Sauteed (in butter and/or coconut oil) bananas with that make it even more insanely good. We have also found that we can strain the juice from cooked pureed pears and it makes an amazing syrup (probably would work for apples too)- we sometimes make popsicles from this syrup, which are great if there is a craving for a sweet treat. I would guess you could juice berries, grapes, etc, and cook them down for a syrup too. But I'll tell you, the cinnamon with honey, combined with the sauteed banans really sends my kids to heaven! It should also be clear honey - ie . honey that is filtered so that most of the pollen is removed. As time goes on and he adjusts gradually increase the honey and slowly decrease the amount of maple syrup until eventually it is all honey.
