Both dehydrating and freeze drying remove water, but they do it differently. Dehydrating removes water from food by raising the temperature of the food causing evaporation of the water in the food. If done at a low temperature the food dries out, but can retain many nutrients (compared to cooking etc..) Freeze dring does exactly what the name suggests the food is frozen first, the pressure is dropped and the water leaves the food as the temperature rises. <<Are they both allowed? They are more advanced because water is removed and if the food is raw before drying it is harder to digest.
