Hi Diane,

The first time I bought almond flour was from www.nuttyguys.com and it was

good. This last time I bought almond flour from DigestiveWellness.com and

it was much finer.

I don't tolerate that much nut flour and have noticed when I 'crave' it,

it's actually salt because I usually toast and salt whatever nuts I use. I

add walnut oil to make butter with almond flour.

I usually toast pecans (bought locally) which is easier for me to tolerate.

I buy them raw. It goes to butter really, really fast so no need for

oil--using a food processor. They make great carrot cake muffins. I have

not found a store brand (like Marantha sp?) that I can stand--except

Almondine from DigestiveWellness also.)

Everyone does it differently and I'm sure in a year I'll have it down :-).

I've read macadamia nuts are really good and easy also but I haven't found

them locally so I go with what I can afford/get locally. Hope this helps.

This source sounds good. I must admit that I worried when I went to

the site and saw how much grain they process, so I sent them an email

and inquired about whether the nuts were done on a separate machine.

Here is the reply:

Thank you for your interest in Honeyville Food Products. The Almond

Flour that comes in the 25 pound boxes is processed in a plant that

only deals with almond products. The 5 pound bag has been small packed

in our facility where wheat products are handled. All lines are

cleaned between runs, but there is a minute possibility of cross

contamination on the 5 pound bag. Please let me know if I can answer
