Egg-less pumpkin pie filling?

Has anyone ever made the pumpkin pie filling from the pecanbread site without

the eggs? We have major egg allergies in my family. I was hoping to make it so

that it would be a good consistency in little muffin cups. I'm afraid that

won't work without the eggs! Maybe gelatin?

Any thoughts would be appreciated.
