Trying to make kimchi.. sugar content

I am trying to make kimchi (fermented veges with ginger & garlic) and

has asked a few Korean people and they told me to use fish sauce. When

I check the ingredients of the sauce , it contains 77% anchovy extract,

20% salt and 3% of SUGAR. I am just wondering if it is okay to use. I

thought the fermenting means digesting all the sugar and turn it into

easily digested food for the gut or am I wrong?

Another question, I am rotating my daughter's food every four days to

prevent a build up causing intolerance, so far so difficult to manage

as the choice of veges are limited as a few of them are quite fibrous

i.e celery and green veges (asian veges) but low in phenol and

salicylates. I'd like to know if Squash & pumpkin (since they are in

the same family) can be regarded as different veges to one another or

the tummy will recognise them as the same thing? sorry if it sounds

stupid but can someone please explain this. One time, I steamed

watercress with lots of roots attached and she's gone really funny,

giggling and angry at the same time and lots of screaming too.

I noticed some improvements too since I started the goat yogurt (this

time using yogourmet starter), she doesn't run away from me in shopping

mall, instead she was holding my hand most of time and just dragged me

to where she wanted to go and she mentioned colours correctly when she

was painting at kindy (not often but it is a BIG thing for me).

There are many recipes for making kimchi. You don't need fish

sauce. If you want to add fish sauce you can make your own legal one.

If you are using salt in your recipe use pickling salt .

What ingredients are you using? (cabbage, cucumber, radish...)

You can leave out the fish sauce in this recipe as it is an optional

Hi Leena,

I have a recipe for traditional fish sauce if you are interested.

We did a four day rotating diet for quite some time. We were able to

split some family of foods into two groups and rotate those on a two

day basis after a while. So for example you could try, pumpkin on day

one, nothing from the squash/pumpkin family on day two, then squash on

day three, then nothing from the squash/pumpkin family on day four.

That worked well for us when our food choices were so limited.

Luckily we've healed enough on SCD that we no longer have to rotate

foods. We also use digestive enzymes from Houston that helped as well.
