Guest guest Posted September 21, 2005 Report Share Posted September 21, 2005 hi everyone; I have perused the recipes listed in the groups files area and I say thank you to the people to made the effort to put that together. I have a question though. One of my favourite dishes is ham shanks & beans. I Don't use ham hocks as they are mostly FAT, gristle, and bone. Fat, well excessive fat; baaaaad thing for us type of people. I use a pressure cooker (Kuhn Rikon 12.5 qt) add water half way up the pot, a couple of diced onions (a mandolin helps here), about 3 tablespoons of black peppercorns, 3-5 bay leaves (depending on their size), two crushed garlic cloves, and 4 lbs ham shanks and 2 lbs of great white northern beans. No, I don't soak the beans, I put them in right out of the bag. After coooking for about 45 minutes I let it cool, refidgerate it overnight, and then skim off the fat the next day. That is when I re- heat it and have them for myself for a few days or a friend and me for 2 days. Thought I would share that recipe. I hope it meets muster with the lower fat diet requirement. It hasn't caused me any pancreas problems; but we are all different. Any suggestions for improvement or changes?
