Sometimes I eat pecans and raisins together and it seems like chocolate. Check out this post from last December. I wonder if Greenberg is still reading the list? They are below mine. Enjoy! Chocolate Brownies I make the peanut butter brownies (from the pecanbread website) for my hubby using pecan butter. He loves them and says they taste like chocolate (but then again he hasn't had chocolate in over a year). I also thought about adding some coffee concentrate to them by soaking a coffee bag in 1 tbs. of boiling water. Sharon in OH, -(Tourettes, yeast and related conditions, SCD since 8-16-07) Wife of Adam - Crohn's 2004, SCD since June 2006 Asacol, Carlson fish oil, Phenol Assist enzyme. ------------ German " Chocolate " Cake - by Claudine 2 cups almond butter (I used Maranatha's raw organic almond butter) 1 cup pure honey 6 eggs ( I use large ) 1 teaspoon of baking soda ( not baking powder ) 1 teaspoon pure vanilla 1 teaspoon almond extract ¼ cup very strong coffee or coffee concentrate* Break eggs in very large bowl. Add vanilla and almond extracts, baking soda, honey, and beat thoroughly. Add almond butter, mix all ingredients. Pour into 2 9-inch round cake pans lined with parchment paper rounds and greased on the sides. Bake in a 300 degree preheated oven for about 40 minutes, or until toothpick inserted in center comes out clean. Cool. Caramel-Coconut Icing: 1 C honey 3/4 C Butter ½ cup dripped half and half yogurt Heat these 3 ingredients to boil frequently stirring (a heavy saucepan is best). Boil for 2-6 minutes, depending on how caramelized you like your icing, constantly stirring to be sure ingredients are well blended. Remove from burner. Add: 1 tsp. Vanilla 1 tsp. Baking Soda The mixture will bubble up when these 2 ingredients are added. Stir the mixture well, then add: 1 ½ cup unsweetened shredded coconut 1 cup chopped walnuts Stir, and let it cool slightly before icing your cake. To frost cake: Stack 2 layers on top of each other, spreading icing in between, and use serrated knife to make edges even before frosting sides. Keep refrigerated, but bring to room temperature before cutting and serving. * I make my coffee concentrate in a coffee toddy, but I think espresso or 2-3 Folger's coffee bags steeped in ¼ cup boiling water would work also. The coffee flavor gives it a nice brownness and flavor. I think you could serve this and pull it off as the real thing. -- Re: Legal chocolate tasting alternative? Instead of using 1/2 cup of pecans use 3/4 cup. The recipe make 6 cups of frozen smoothie. The beef bone broth makes the consistency very close to ice cream if you put enough ice to make it super thick. Here's the recipe again with the change. 3/4 cup of pecans 1 cup of water (or beef broth (it can't have any seasoning added to it)) (The beef broth gives it a real creamy texture almost like ice cream because of the gelatin I guess.) 3/4 - 1 cup of expresso 1/2 cup of honey (or more, taste to see if still bitter) 4-5 cups of ice (more if you want thicker) Sorry for the change. I don't really measure too much when I'm making it. They usually turn out good even with a slight recipe change. I made some nut butter with pecans, safflower oil, and a little salt. Then I followed the peanut butter brownie recipe in the BTVC book. I baked it for less time than prescribed in the book, probably only 18-20 minutes because I was unsure about how quickly pecan butter would cook as compared to peanut butter. Well, Jack, my 5 year old son, loved it! He called it chocolate pudding. To me, it tastes just like pecan pie without the big pecan pieces. Yumm. I don't think either is very close though - it may be better to go wit a different flavour altogether (vanilla, lemon, orange etc..)
