Help using dehydrator to make yogurt

Hi ladies. I apologize if this is covered in the archives; I couldn't

seem to find the answers that I was looking for. I just got an

Excalibur dehydrator (does BIG happy dance) and I want to make a ton

of yogurt. I am running test batches of water in mason jars right now

to determine what temp to set my dehydrator at. Right now I have the

thermostat at 115 and the jars of water seem to be hovering around

100. Now I understand that the air temp (what I set the thermostat at)

is not the same as the food/yogurt/water temp which will be lower than

the air temp. How much does this fluxuate though? How long do I need

to test the water jars for before I can be confident of trying it with

yogurt? I've had them in there for about an hour now. Do I need to

test them over the entire 24 hour period, or should the temp I'm

getting after one hour hold fairly steady? I'd hate to waste 7 quarts

of yogurt because I didn't have it right yet. Any tips or advice? What

ballpark should I be aiming at for the air temp to get the proper

yogurt temp?

Myself and 2 kids are SCD, hubby is finally and ever so slowly

transitioning to it. Conditions we are treating successfully with SCD:

Hashimoto's Thyroiditis (autoimmune), Chronic Fatigue Syndrome,

Fibromyalgia, Rheumatoid Arthritis, IBS, ADD, ADHD, chronic diarrhea,

yeast/candida, and salicylate intolerance.

Hi,

I find that, unless I mess with the temp dial or move my containers

around, the temp of my yogurt stays pretty steady after the first 90

minutes. You might want to " pull an all-nighter " the first time to

make sure this is true of yours as well.

Thanks . I've decided to run it overnight with the water and keep

checking on it periodically, then if all goes well, I'll put the

milk/yogurt in in the morning.
