Guest guest Posted November 1, 2007 Report Share Posted November 1, 2007 Hi ladies. I apologize if this is covered in the archives; I couldn't seem to find the answers that I was looking for. I just got an Excalibur dehydrator (does BIG happy dance) and I want to make a ton of yogurt. I am running test batches of water in mason jars right now to determine what temp to set my dehydrator at. Right now I have the thermostat at 115 and the jars of water seem to be hovering around 100. Now I understand that the air temp (what I set the thermostat at) is not the same as the food/yogurt/water temp which will be lower than the air temp. How much does this fluxuate though? How long do I need to test the water jars for before I can be confident of trying it with yogurt? I've had them in there for about an hour now. Do I need to test them over the entire 24 hour period, or should the temp I'm getting after one hour hold fairly steady? I'd hate to waste 7 quarts of yogurt because I didn't have it right yet. Any tips or advice? What ballpark should I be aiming at for the air temp to get the proper yogurt temp? I'm so excited that I finally got an excalibur!!!!!!! Guest guest Posted November 1, 2007 Report Share Posted November 1, 2007 Hi, I find that, unless I mess with the temp dial or move my containers around, the temp of my yogurt stays pretty steady after the first 90 minutes. I've decided to run it overnight with the water and keep checking on it periodically, then if all goes well, I'll put the milk/yogurt in in the morning.
