Veggie pancakes and squash buttons help!

I tried cooking the veggie pancakes today and they won't cook in the

middle. So, I tried doing the squash buttons with the pancake recipe

in little mini muffin tins, same thing. Won't cook in the middle.

The only difference is that I used zucchini (that's what I had on

hand). Would that make that much of a difference?

Hi, yarn-girl,

I think there's a lot more water in zucchini than in winter squash and

a lot of other vegetables, so maybe that was the problem. If you try

winter squash or carrots and still have trouble, then maybe try making

the pancakes smaller. Maybe you can use zucchini if you salt it, let

it stand 30 minutes, and then squeeze out the water before pureeing.

Zuchinni is a very watery veggie. Acorn or butternut squash works better

because it is more dense.
