So, I tried doing the squash buttons with the pancake recipe in little mini muffin tins, same thing. Won't cook in the middle. The only difference is that I used zucchini (that's what I had on hand). Guest guest Posted November 2, 2007 Report Share Posted November 2, 2007 Hi, yarn-girl, I think there's a lot more water in zucchini than in winter squash and a lot of other vegetables, so maybe that was the problem. If you try winter squash or carrots and still have trouble, then maybe try making the pancakes smaller.
