I'm only asking because I'm following a dairy-free version of SCD and I've tried thick coconut cream - which did work to a degree but didn't produce the desired result I'd hoped for. I am not sure how well it would work but makin a puree of cooked veggies, draining it very well may work (pressing the cooked veggies). I press a lot of liquid out of things (liked cooked winter squash) by laying a clean handkerchief on a couple of thick bar towels, adding the cooked and pureed vegetable, spreading it out a bit, laying another handkerchief on top, then another set of towels, and then placing something heavy on top for a few hours. (You CAN use paper towels, but after using a whole roll of paper towels on three lousy cups of squash and still not getting it as dry as I wanted, I switched to using reusable, washable towels.)
