We began the SCD diet in May of this year and have seen enormous improvements and are very encouraged by his progress, as well as the rest of the family - we're all following the diet with him, and he and we are all very pleased with it. The one thing he still asks wistfully about is chocolate. He accepts that chocolate bars are not good for his tummy right along with hot chocolate, chocolate cake and all the other chocolate products out there. Because of his sister's success with creating and using recipes from all the good SCD recipe books and sites out there, he has asked her if she can make something with chocolate in it. The only product I know of which does not contain any form of dairy or sweetener is the pure cocoa nibs (they're bitter) which are being sold in health foods stores. Does anyone know if it is SCD legal, or how to find this out if no one does know? If it IS SCD legal, we've been thinking of experimenting with the raw cocoa nibs, coconut milk/cream, and honey as a start to see what we can come up with (we'd probably have to grind them, they're quite tough). There was a recent discussion about substitutes to somewhat mimic chocolate flavor. It seems like such a bear...and I wonder how I can make the rest of the family happy on such a restricted diet. The discussion on the dread ch-c-l-t- came up more times than I want to think about on the Long Island list. Elaine said that Dr. Haas was concerned about the chocolate itself, and not just the sugar in most processed stuff. I found a cocoa powder which, as far as I could tell, had nothing in it. I tinkered with it a bit, trying to come up with an SCD legal chocolate, and using honey as the sweetener. I came up with several halfway decent mixtures, but when I " system tested " them, ie, on myself, the result, every time, even when I left out the honey, to which I reacted for a long time, was diarrhea. My husband also says my temper went to Hades in a hand basket. However, keep in mind that the OILS of even illegal products can often be tolerated. OK -- here's something which just sprang to mind. I have NOT kitchen tested it, as I don't have any cocoa butter on hand! I would find a good food quality cocoa butter (probably at a candy making store: go there by yourself!!). Take some Medjool dates (if tolerated) and pit them, and chop them in small bits. Cook them with a small amount of water and several tablespoons of the cocoa butter. I'd use more cocoa butter than water. Add a pinch of salt, and some vanilla extract. Let the mixture cool and shape it into bars, or kisses, or whatever, and let it set up in the refrigerator. You might have to tinker with the proportions a bit. So called WHITE chocolate is made with cocoa butter and vanilla. The Medjool dates are very sweet and rich and have a kind of chocolate taste (well, to my mind, anyway!). This might give you a legal " chocolate. Guest guest Posted November 4, 2007 Report Share Posted November 4, 2007 Di, I make a meatloaf that even my non-veggie eating sister LOVES. I gave it to a non-SCD eating friend, my husband and a few others and they all LOVE it. I don't know if its simple enough, but it is to me. I take the ground beef/chuck/round (I use the fat that drips off for flavoring my son's green beans), carrots, zucchini, egg and salt. Can't get much simpler. It is about 1 or 2 small zucchini and about 1/2 lb (or maybe a little less) carrots per 1 lb of meat. I peel and shredd the veggies and cook them till they are typical early stage extremely soft and most of the water is cooked out. I combine that, salt to taste and eggs (1 or 2 depending on how you like it), put it in my stone ware cake pan and bake at 375 degrees. I actually make about 6-8 lbs at a time and slice it up in slices then freeze in meal portion sandwich baggies. I used about 8 zucchinis and 3 lbs of carrots. I HATE zucchini, but it seems to fill out the empty flavor of the ground meat and it is great together. I will buy zucchini and carrots regularly, peel, cook and freeze it until I'm ready to make meatloaf. Makes it much easier.
