Yes, I have the book, but we had a house fire, and the cleaners came and took everything out of the house to clean it- including my book, and I don't have it right now. Thank-you so much. Amber. Preheat oven to 375F (190C) 2 & 1/2 cup ground nuts 1/4 cup melted butter or 1/4 cup homemmade yogurt or small amount of fruit juice or pure apple butter 1/2 cup honey (more or less as desired) 1/2 teaspoon baking soda 1/8 tsp salt (optional) 3 eggs (if avoiding eggs use pureed fruit) With blender: After grinding nuts in blender, empty them into a bowl. place eggs and honey in blender and mix thouroughly. Add the egg mixture to the nuts and blend by hand or with electric beater. Add butter or yogurt as needed to bring to a muffin batter consistency. Blend in baking soda and salt. Using a food Processor: After grinding nuts, allow nuts to remain in processor bowl. Add other ingredients adding butter or yogurt last according to how much liquid you need to bring the batter to a muffin consistency. 16 muffins: line cupcake tins with cupcake liners. Fill liners half full Bake at 375 for 15-20 minutes or until tops spring back. To make nut bread: add 1 more egg to batter and bake in a well buttered 1 quart baking dish.
