Grilled tilapia with butter and Cajun BBQ seasoning, tossed salad with Hurricane dressing Grilled burger with cheddar, two slices of tomato and half a ripe avocado Pepperoni and sausage pizza on a parmesan crust with provolone topping Grilled tilapia with butter and Cajun BBQ seasoning, tossed salad with Hurricane dressing Last night -- as I do every Saturday night -- I went out for burgers and a salad with my husband at a restaurant which works really hard to meet my needs, then swung by Borders to check out this week's new books! I had burgers three times and tilapia twice because it was a crazed week. This week, I'm looking at sesame ginger shrimp with bok choy, Creole catfish with a side of buttered steamed spinach, pork chops and French cut green beans, Creole pot roast with carrots (probably get two meals off this one, with a lunch or two), beef-and-lentil chili, and then burgers and tilapia at the end of the week. Don't ask me what the following week will be! Maybe Italian meat sauce on zucchini noodles or Mexican casserole.... A couple of these, like the chili, are a bit advanced for a newcomer. Ditto anything with raw salads, with the exception of ripe avocado. Luckily, I don't have to worry about salicylates or phenols like so many of you do. But these are just examples of some easy to prepare meals.
