Paneer is a bit rubbery and unsalted (texturally similar to Queso Blanco). From the SCD perspective, I think Sheila is right and so I will skip the idea for now. I finally got the book and have read through it once (skimmed the sections after the Legal foods). I have had many undiagnosed ailments for too many years and came upon the SCD through casual conversation at a recent neighborhood gathering. It appears that many of my symptoms are similar to those described in the book and in the generally available info on GI disorders. I am hoping to see even slight improvements on the SCD to determine if it is for me and could help. The basic aspects of SCD make much sense and we are considering adapting them into our family diet (wife has struggled with weight, daughter has some Sensory Integration issues).
