We are in Stage 2 and are doing well, but that stage does not advocate nut flour use yet, so I haven't baked anything. If my kids and I are not experiencing D (we are pretty much the opposite), is it necessary to peel and deseed everything? Or can we move on to the raw food? Or can I at least use nut flour to make muffins or something? We're going through a lot of eggs, carrots, green beans, hamburgers. I make meals, but they're hungry in between meals and I don't always have snacky stuff around. I have made a lot of jello lately and they like that but I'm just wondering about other alternatives. I make them as muffins, mini muffins, sheet cake, mini bundt cakes and they always turn out well. My son loves them and I have started to add add'l veg etc. to them as I experiment. I made a batch with banana and yellow squash yesterday that were great. The different types of foods (Fruits/Vegetables/Nuts etc) are separate and the stages in each are listed as examples that go from easiest to digest to hardest to digest. For example the section on Nuts: The nut butters are easier to digest than nut flours; and nut flours are easier to digest than nut pieces. Nut pieces are easier to digest than whole nuts. You may be able to tolerate/digest nut flours before you are able to digest many of the fruits or veggies in stage 3. The chart illustrates the progression from easiest to digest foods to hardest to digest in each section - but they don't necessarily match up with each other (stage three nuts and stage three fruits). I am able to use nut flours and some nut pieces but don't tolerate rhubarb and occasionally have trouble with cooked pumpkin. <<<<<use yet, > so I haven't baked anything. Or can we move on to the raw food?>>>> If you are doing well try a little raw and see how well it is tolerated. Keeping a food journal will allow you to keep track of foods and your reactions. When you start with nut baked goodies (muffin/bread/cookies etc..) start with 1/4 -1/2 muffin (bread or cookie equivalent) the first day and if well tolerated increase the amounts of the next few days.
