I believe there are a few different ones but the one we use is: Peel and core 3 apples, blend/grate apples in food processor. Mix in 3 eggs and 1/2 teaspoon cinnamon powder. fry in pan in cooking oil or butter, as you would pancakes. I do them small and cook slowly over a lower heat than you would regular pancakes, as they are a little trickier to flip and turn, but they are delicious- and flourless- Also one of the best cookbooks for kid-friendly SCD recipes I have found is " cooking to heal little tummies " , that along with " grain-free gourmet " have been my favorites and the ones i have had the most success with in our transition from gfcf to scd. There is a great cookie recipe in " Cooking to heal little tummies " , for mock sugar cookies: 2 cups almond flour, 1/4 teaspoon salt, 1/4 teaspoon baking soda, 1/3 cup honey, 2 Tablespoons coconut oil; Mix dry ingredients, add coconut oil and honey, mix well. Roll dough into balls and flatten with fork on parchment lined baking sheet. Bake at 275 degrees for 20 to 30 minutes or till slightly golden. Place on cooling rack and sprinkle with cinnamon if desired. It also says you can refrigerate the dough and then roll out and use with cookie cutters, but i have always just done the balls for convenience sake. I have never tried a substitute nut flour, but if almonds are an issue, i imagine you could try pecan or walnut flour, etc...??? For breakfast she likes the almond waffles, but I need some more ideas. She is not really into eggs plain. For lunch she likes hamburgers, but that is it. I need to find some kind of bread, preferably not made with almond flour. I also need some help finding some cookies and crunchy things that she can snack on. She really craves crunchy things. Thanks for any recipe advice. I am not all that much into cooking, but I am trying! Adrienne PS Somebody had a french toast with egg bread recipe, but I cannot find it. Does anybody have one? Pecans are another easy to digest nut. They are a little oilier so you may have to adjust for that in a recipe. If you use hazelnuts/filberts you should probably remove skins (use blanched nuts) because the skins are very fibrous. <<<<<I also need some help finding some cookies and crunchy things that she > can snack on. Spectrum Palm oil) To make crackers you can take muffins and breads, slice them thinly and toast them at about 170F until they are dried and crunchy. <<<<Thanks for any recipe advice. Does anybody have one?>>>> I make french toast with the nut free dairy free bread. Sometimes I sprinkle in some ground cinnamon and mix that with the eggs to make cinnamon french toast.
