He eats quite a lot of these two foods, especially eggs. I know you can replace eggs, but I was always happy he was getting protein. He eats lots of fruit and veggie muffins. What can I add to them to increase the protein, besides chicken. The muffins I make call for 4 eggs. How can you replace such a large amount and them not fall apart. Also, for those who can't have tomatoes, what do you do about spaghetti sauce. We love spaghetti squash with sauce. Thanks! UnTomato Sauce Source: Feingold Diet 1-1 pound can beets, drained well –USE FRESH COOKED BEETS 2 1-pound cans carrots, drained –USE FRESH COOKED CARROTS 2 Tbsp lemon juice 1 cup water 1 tsp salt 1/2 tsp oregano 1/2 tsp garlic powder -HOMEMADE 1 tsp basil 1/2 tsp sugar –USE HONEY Puree completely in processor (no chunks of carrot left). Let sit for several hours in the refrigerator for flavors to blend. Onion, garlic, spices, mushrooms and cooked hamburger may be added to taste for spaghetti suace, pizza sauce, etc. - Un-Catsup Source: Feingold Diet 1 recipe UnTomato Sauce (see sauces and salsas) 2 sticks celery, diced fine 1/2 tsp cinnamon 1/4 tsp dry mustard 1/4 cup onion, chopped 1/2 cup apple cider vinegar 1/4 tsp black pepper 4 tsp sugar –USE HONEY Add all ingredients to pan and boil until reduced and thick. Stir frequently to prevent sticking. This usually takes about one hour. Strain sauce. Freeze whatever will not be used within one week. I was unable to eat regular store eggs, but am fine with free range chicken eggs. Cook legal bacon, remove from pan (when cooll enough to handle cut in bite sized pieces) Saute some onion, fresh garlic, add a little oregano and basil - then toss the cooked spaghetti squash in with the spices and add the bacon.
