Christy, I haven't tried freezing whole avocados, but I scoop the meat, and beat it up smooth with freshly squeezed lemon juice (2 largish lemons per six avocados) and pack it in boxes, and it freezes just great. I also add half a teaspoon of white pepper and 3/4 teaspoon salt to the mix. This makes a really great avocado dip, and it can also be used as an avocado " mayonnaise " for chicken salad and so forth. I even make " Martian Pudding " out of it by adding vanilla extract and honey (and pear sauce would probably work fine if honey is not yet tolerated). I see raw peeled lemons are OK in stage 4, but is that when the juice is OK? I don't plan on actually eating a lemon anytime soon. B. Guest guest Posted November 16, 2007 Report Share Posted November 16, 2007 Hi! i just thought i would add that i always have a quantity of frozen avocado halves in the freezer..i find they are a great way to sneak extra protein into things. In a hurry, i have frozen whole avocados...just put in a ziplock bag, skin and all. they actually freeze well this way. If i'm organized i throw them in the fridge overnight to thaw, but you can also toss them into warm water and they thaw pretty quickly [still in skins] i've found that if the avocado is really overripe it will come out a bit brown, but otherwise, they look and taste ok. my son's favorite food is green pudding...the basic recipe is on pecanbread. i use half or whole avocado, a banana, honey or pearsauce, almond flour a bit of vanilla. especially good if the banana is a bit frozen. it comes out a glorious bright green colour. good luck, cindy IBS, SCD 2.5 years [having trouble after just having major surgery] Brady, ASD, CP, 7, SCD 2.5 years Quote Link to comment Share on other sites More sharing options...

If you are having any trouble with raw fruit/fiber at that time make sure you strain out the pulp and fiber. My son spent two days on the intro, but I stayed longer and kept out eggs until recently to be on the safe side. I should mention that this was the first full week on SCD for my son. We received a note from his teachers saying that my son was great all week -- he did not try to bite himself or others and by the end of the week he had stopped headbutting people. They said he was behaving very much like a typical almost-five-year-old. I was so proud and happy. B.
